Stuffed Peppers

Stuffed Peppers 
(made gluten free, can be made dairy free)


  • 5 bell peppers

  • 1 cup cooked brown rice or cauliflower rice

  • 1 package of ground turkey or beef 

  • 1/2 cup feta or Mexican blend cheese

  • 1 Tbsp ghee or olive oil 

  • 1/4 tsp salt 

  • 1 tbsp Mrs.Dash Italian seasoning 

  • 4 cups raw spinach, chopped

  • 1/2 onion, chopped 


🌶 Preheat oven to 425 F.
🌶 Cut tops of the peppers off and de-seed.
🌶 Place the peppers on a foil lined baking sheet and rub olive oil on the outside of each pepper. 
🌶 Place in the over for 20 minutes to soften.
🌶 Cook rice according to package.
🌶 While the peppers are in the oven, add oil to a pan over high heat. Add the chopped onion and sauté for about 5 minutes. 
🌶 Add ground meat, Italian seasoning, and salt, until beef is cooked through. Stir in the chopped spinach at the end to wilt into the mixture. 
🌶 Mix ground beef and rice in a large bowl, stir together until completely mixed. Add , mixture to peppers filling them all the way to the top. Add desired cheese onto and bake for 10 minutes or until cheese is melted.
