Banana Coconut Flour Pancakes

Allergens: eggs, nuts

Ingredients

  • 2 eggs

  • 1 overripe banana

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

Directions

  1. Mix eggs and mashed banana in a bowl

  2. Mix coconut flour, baking powder, and cinnamon in a separate bowl

  3. Combine both mixtures together and let it sit for 5 minutes (important to let the flour absorb the moisture)

  4. Oil a pan very well (I use coconut oil so it doesn’t burn) and drop batter onto the pan with a spoon, smoothing the batter into a circle with the back of the spoon

  5. Cook on medium for about 2-3 minutes on each side

  6. Enjoy!
