Butternut Squash Waffles

(Makes about 7 medium size waffles)

Allergens: egg, nut (can make a nut free version; omit the shredded coconut and use brown sugar)

Ingredients:

  • 1/2 cup canned butternut squash

  • 1/2 cup brown rice flour

  • 1/2 cup egg whites

  • 1 whole egg

  • 1/4 tsp baking powder

  • 2 tsp cinnamon

  • 1 tbsp coconut sugar

  • 3 tbsp shredded coconut

  • pinch of salt

Directions:

  1. Heat waffle iron to highest setting

  2. Combine all ingredients in a blender until combined

  3. Spoon into the waffle iron, wait for timer to go off

  4. Top with anything you desire !
