Carrot Cake Pie

Allergens: eggs, dairy, nuts 

Ingredients

  • 2 eggs

  • 1/2 cup plain greek yogurt

  • 2 cups grated carrots ( I shredded mine then put them in a vitamix)

  • 2 Tbsp orange juice

  • 1 1/2 cup gluten free flour (I used Cup4Cup; can use Whole Wheat or regular)

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 cup chopped walnuts

Frosting:

  • 1/2 cup powdered sugar

  • 2 tsp vanilla extract

  • 1 cup greek yogurt

Directions

  1. Preheat oven to 350 degrees

  2. Mix wet ingredients and dry ingredients in separate bowls

  3. Mix both together and fold in walnuts

  4. Pour into 8×8 baking sheet sprayed with non-stick spray

  5. Bake for 25-30 min

  6. Let cool and then add topping
