Easy High Protein Sweet Potato Muffins

Allergens: egg, nuts 

Ingredients 

  • 2/3 cup egg whites

  • 1 egg

  • 1/2 of a cooked sweet potato

  • 1/2 banana

  • 1 tbsp coconut flour

  • Lots of cinnamon

Directions

  1. Preheat oven to 375

  2. Line muffin tray with tins sprayed with oil

  3. Mix all ingredients in a blender or food processor and LET SIT for a few min so the coconut flour can absorb the moisture ***

  4. Bake for about 30-40 min; I let mine go even longer until the tops get golden brown
