Peanut Butter Cookies

Allergens: nuts

Ingredients 

  • 1/3 cup gluten free oat flour

  • 2 1/2 cups unsweetened reduced fat shredded coconut flakes

  • 1/2 cup all natural peanut butter

  • 3/4 cups full fat coconut milk

  • 1 teaspoon vanilla extract

  • 1/2 cup dark brown sugar (I used coconut sugar – can use stevia to reduce calories )

  • 1/2 teaspoon salt (omit if peanut butter has salt in it)

  • melted dark chocolate for drizzle

Directions

  1. Preheat oven to 350 degree F. Line a baking sheet with parchment paper

  2. In a large bowl, mix together coconut milk, peanut butter, vanilla, sugar, and salt

  3. Stir in the coconut and flour and mix until combined

  4. Scoop tablespoons of batter onto a prepared baking sheet (or use a cookie scoop) and bake for 10-12 minutes

  5. Melt dark chocolate in a pan over low heat stirring frequently, and drizzle over the top
