Allergens: nuts, egg
- 1 large yellow plantain
- 2 Tbsp oat flour
- 1 Tbsp coconut flour
- 2 extra large egg
- 1/3 cup egg whites
- 1 tsp cinnamon
- Blend all ingredients in a blender or food processor. Let sit for about 2 minutes so the coconut flour can absorb the moisture.
- Heat a nonstick pan on medium.
- Drop batter into pan and smooth with the back of the spoon forming pancakes. Flip after about 2-3 minutes.
- Layer with bananas, chocolate almond butter, crushed coconut, cashews (or any nut, these are from Trader Joes!), and finish off with some powdered sugar 🙂
