Plantain Pancakes

Allergens: nuts, egg 

Ingredients 

  • 1 large yellow plantain

  • 2 Tbsp oat flour

  • 1 Tbsp coconut flour

  • 2 extra large egg

  • 1/3 cup egg whites

  • 1 tsp cinnamon

Directions

  1. Blend all ingredients in a blender or food processor. Let sit for about 2 minutes so the coconut flour can absorb the moisture.

  2. Heat a nonstick pan on medium.

  3. Drop batter into pan and smooth with the back of the spoon forming pancakes. Flip after about 2-3 minutes.

  4. Layer with bananas, chocolate almond butter, crushed coconut, cashews (or any nut, these are from Trader Joes!), and finish off with some powdered sugar 🙂
