Pumpkin Banana Muffins (with chocolate/pb filling)

Allergens: nuts, egg

Ingredients 

  • 1/2 cup cashew meal

  • 2 eggs

  • 1/3 cup ground flax seed

  • 1 banana

  • 1/2 cup butternut squash or pumpkin

  • 1 cup dairy free mini chocolate chips

  • 1 tsp baking soda

  • 1 tsp vanilla extract

  • 1/2 cup cashew milk

  • 2 tsp pumpkin pie spice

Directions

  1. Preheat oven to 350F

  2. Mix wet ingredients and then in a separate bowl mix dry ingredients

  3. Combine and then add in chocolate chips

  4. Scoop batter to fill the muffin tin half way and place 1/2 tbsp chocolate almond butter or peanut butter in the center. Then fill the rest of the tin with more batter

  5. Bake for 30 min and enjoy!
