Tigernut Banana Bread Bars

Allergens: nuts

Ingredients:

  • 2 very ripe bananas + 1/2 of one for layering
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup coconut oil melted
  • 1/2 cup tigernut flour
  • 1/4 cup honey
  • 2 tsp cinnamon
  • 1/2 cup dairy free chocolate chips (I use enjoy life)

Directions:

  1. Preheat oven to 350F
  2. Blend bananas, vanilla, and coconut flour until smooth
  3. Add in tigernut flour, baking soda, and sea salt and blend until batter is smooth
  4. Fold in chocolate chips
  5. Oil a loaf pan and transfer half of the batter into the bottom of the pan
  6. On top of the first layer, add chunks of banana, drizzle 1/4 cup honey, and sprinkle cinnamon, and then top with the rest of the batter
  7. Bake for 45 min or until golden brown on the edges
  8. Let cool before transferring out of the pan
