Paleo Banana Bread

Ingredients:

  • 1/2 cup almond milk

  • 1/2 cup almond butter

  • 2 ripe bananas, mashed

  • 1 cup Birch Benders Paleo Banana Pancake mix 


If not using Birch Benders mix:

  • 1/2 cup almond milk

  • 1/2 cup almond butter

  • 1/4 cup coconut oil, melted 

  • 2 ripe bananas, mashed

  • 1.5 cups blanched almond flour 

  • 2 tbsp coconut flour 

  • 1 tsp baking soda 

  • 1/2 tsp baking powder 

  • 2 tsp vanilla extract 

  • 1/4 tsp sea salt 

**Optional: 

1 cup enjoy life dairy free chocolate chips 

1/2 cup chopped walnuts

For caramelized banana top:

  1. Slice 1 banana length wise

  2. Heat 1/2 tbsp of coconut oil and 1 tsp cinnamon in a large pan on the stovetop and lightly fry the banana until soft.

  3. Place banana carefully with a spatula on top of banana bread before going in the oven.

Directions:

  1. Preheat oven to 350F and oil a medium loaf pan with coconut oil. 

  2. Whisk together all dry ingredients and set aside. In a large bowl, mash the bananas and then whisk in the other wet ingredients. 

  3. Slowly stir the dry mixture into the wet until no visible flour remains.

  4. Transfer the batter into the load pan and bake in the preheated oven for 30 minutes for the birch benders mix and 40-50 minutes for the recipe without the mix. To test doneness, stick a toothpick in the center of the loaf and it should come out clean when it’s done!
